Bak kut teh is a Saim-Chinese soup popularly served in Southern Thailand. The name literally translates as "meat bone tea", and, at its simplest, consists of meaty pork ribs simmered in a complex both of herbs and spices with fresh and dried mushroom plus Thai home made light and dark soy sauce. Serve with Thai jasmine rice.
