This is a traditional take on chilaquiles inspired by my grandmother. We start with tortilla chips fried in house. They are dressed to order with fried onions and salsa rojo which consists of pasilla peppers, guajillo peppers and roast tomato. Garnished with habanero pickled onions,cilantro and a sunny egg.
